LINE MANAGER: Executive Chef
Our Executive Sous Chefs play a pivotal role in delivering unparalleled culinary experiences to our Guests aboard our cutting-edge cruise ships. Working closely with our Executive Chef, they lead our galley teams to uphold the highest standards of quality and innovation in all onboard dining venues.
• Collaborate closely with the Executive Chef to oversee daily food preparation activities, ensuring adherence to Company standards for quality and presentation.
• Coordinate with the Executive Chef, Sous Chefs, and Chef de Partie to plan daily food production schedules and anticipate culinary needs.
• Maintain open communication with the Dining Operation Manager to address Guest feedback and accommodate special requests promptly and efficiently.
• Partner with the Inventory Officer/Provision Master to manage inventory levels, identify fast-moving items, and implement effective inventory control measures.
• Ensure strict adherence to Company recipes and sanitation standards, including regular inspections of food preparation areas for cleanliness and compliance.
• Actively participate in meetings and provide timely updates to the Hotel Director/F&B Director on operational issues and solutions.
• Collaborate with the Inventory Officer, Provision Master, and F&B Director to plan and execute food orders for upcoming cruises, ensuring alignment with Company standards and guest preferences.
• Minimum of 10 years of experience in high-volume culinary operations, with at least 5 years in a leadership role.
• Completion of a professional culinary program or equivalent certification; Bachelor's or Master's degree in Culinary Arts preferred. HACCP Certification is required, with USPH Course Certification considered a plus.
• Proficiency in spoken and written English; fluency in additional languages such as Italian, Spanish, French, German, or Portuguese is advantageous.
• Strong commitment to safety protocols and sustainability practices, with a proactive approach to promoting a safe work environment.
• Exceptional teamwork and communication skills, with a demonstrated ability to thrive in a fast-paced, collaborative setting.
• Proficiency with computer applications, including Microsoft Office Suite (Word, Excel, Outlook).
• Flexibility and adaptability to embrace organizational changes and capitalize on emerging opportunities.
• Excellent leadership, problem-solving, and stress management capabilities.
• Must hold a valid passport and preferably possess a copy of a seaman book.
